From the barren red slate soils with its many quartz inclusions of the ried Dr. Wunsch comes the 2019 Phyllit Riesling Spätlese "Dr. Wu..."—a juicy, intense and crystalline, wonderfully mineral, piquant and terroir-driven Riesling in the demi-sec style (legally this is a sweet Spätlese, but due to its quartzite and slate nerviness, the sugar is not that prominent to the taste). Due to the DAC regulations, according to which only dry wines may be marketed as single-vineyard wines, the true origin of Dr. Wunsch comes out only cryptically on the label, which is why there are ellipses where the rest of the vineyard's name should be. The grapes of Wohlmuth's very first fruit-sweet Riesling were harvested at the end of October in perfectly ripe condition at 20° KMW (just short of Auslese quality), pressed as whole clusters and fermented spontaneously and very slowly in used 2,000-liter barrels until fermentation came to a halt in February at 10% alcohol and 75 grams per liter residual sugar. The wine was then drawn directly from the lees to the bottle at the end of May 2020. It is highly stimulating due to its mineral grip and tension. Tasted in October 2020.
