"Abasolo is produced in Jilotepec de Abasolo, Mexico, and is said to be the first distillery devoted fully to Mexican whisky, as well as the first 100% corn whisky from Mexico. The whisky is made from Cacahuazintle corn which undergoes nixtamalization, a traditional process of soaking and cooking the corn before washing and hulling the grain. The corn is then roasted and milled. Also, a small portion of the corn is malted and added at the mashing point. Abasolo is double pot distilled and matured for 24 months, mostly in used American oak and some new, medium-toasted barrels. The nose offers buttery popcorn, toffee, and masa, with a hefty undertone of roasty vegetal notes. The palate shows honey and an agave grassiness, buoyed with a dose of salt. Towards the back palate, find brown sugar, skillet cornbread flecked with jalapenos, and bell peppers." - Distiller
