These old bushvines are a source of pride and joy, roots delving deep into granite, resonating with a secret tune that beckons you closer. The grapes were hand picked, hand sorted and whole bunch pressed. The juice with no additions undergoes wild yeast fermentation in a mix of cement eggs, foudres, and old barrels of various sizes. Fermentation lasted about 1 month, then the wine was kept on the lees for around 12 months, then rested in tanks on fine lees for an additional 6 months before bottling. This vintage has a beautiful nose of apple and pear, sweet herbs and some delicate citrus. The palate is juicy and fine with a lovely intensity.
Sea shells, chamomile, white grapefruit and waxed lemons on the nose with a touch of juniper berry. Precise and pure, with a cool creaminess and a medium body. Sleek and honest. Drink or hold.
