The 2008 Chablis 1er Cru Vaillon is a brilliant wine from Defaix. Unwinding in the glass with scents of citrus oil, drawn butter, clear honey and oyster shell, it's medium to full-bodied, racy and chiseled, with a deep core of fruit, tangy acids and a long, saline finish. It's already sold out at the domaine, but readers may be able to find bottles circulating on the marketplace.
