The color is bright red with purple highlights. The nose is intense and complex on spicy notes added to aromas of red fruit jam and a hint of light tobacco. The mouth is attractive and smooth with a tight texture, on ripe fruit followed by licorice flavors and a mineral background with silky tannins. The finish is elegant and subtly spiced.
Harvesting is carried out by hand picking each plot separately. The grapes are harvested at full maturity and carefully sorted, then slightly destemmed and crushed. Then fermentation takes place under strict temperature control. After the final blend is determined, the wine is aged in oak and stainless-steel tanks
History
Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine Père Caboche with his children Emily & Nicolas. Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provencal word for ‘horseshoe nails’.
Vinification
All mature grape varieties are destemmed and slightly crushed. Permanent temperature control during fermentation, traditional maceration (during 14 days). Short ageing in stainless steel tank to preserve the fruity potential.
